Slow Cooker Steel Cut Oats with Apples
I have been looking for healthy meals that I could cook and refrigerate and actually enjoy reheated! I have found a lot of meals that say they are good reheated but….yea not so much! I found a few similar recipes for steel cut oats and decided to try my own spin on it which often turns out disastrous but this time it was great and I have been experimenting with it ever since.
I am all about easy so I don’t peel the apples which makes the hardest part of this recipe chopping apples. So here is the instructions: chop apples throw them in crock pot throw all the other ingredients in crock pot and turn on low 6-8 hours.
****Quick notes: For the milk you can use the milk of your choice for the most part I like cows milk but I think the next time I would like to try almond or coconut milk. You can also go with half milk half water or all milk depending on how creamy you want it.
Also taste apples before you add sweetener to the mix
I use 3-4 apples you can use as little as 2 apples I just really like apples
1 Cup of milk
2 cups of water
1 cup of steel cut oats
1 tbsp. of butter cut up (optional)
pinch of salt
teaspoon of cinnamon
splash of almond extract
splash of vanilla extract
2 tbsp. of coconut sugar (optional)
Add a splash of milk and throw it in the microwave
MIX IN IDEAS
Next time I plan to skip the sweetener and add as needed when reheating coconut sugar, honey or maple syrup.
My first couple of batches the apples were not as sweet and I have a pretty good idea this batch is going to be too sweet after tasting the apples but I already had everything but the apples in the crockpot.
The entire recipe is between 1200-1300 calories give or take a few depending on what I add or delete from it and it makes 4-6 servings.
